Stinging nettle ‘Urtica Dioica’ has many medicinal benefits such as being very high in nutrients and itimins, has been shown to reduce inflamation, reduce symptoms of hay fever, lower blood pressure and aid in controlling blood sugars.

This yummy cake is a delicious way to easily incorporate some of its benefits into your diet (if your like me and arent a fan of nettle soup!)
For the cake :
100g nettle tops
200ml Plant based milk or milk of choice
1tbsp lemon juice
75ml veg oil
200g caster sugar
250g plain flour
1tsp bicarbonate of soda
zest of 1 lemon
For the icing :
50g icing sugar
Juice of 1 lemon
Method :
– Forage the top 6-8 leaves of nettle
– Preheat the oven to 170 C
– Wash them and boil or steam them for 4 minutes and then transfer straight into cold water
– Strain and squeeze out excess water
– Blend with milk and lemon juice until smooth
– Add to a bowl with veg oil and mix well
– Add sugar, flour, bicarb and zest and mix until combined
– Transfer into your loaf tin and bake for 45 mins or until a knife/ skewer comes out clean
– Allow to cool
– Combine icing sugar and lemon juice and drizzle over the loaf when cooled completely
– Enjoy!
